Ayala has been our house Champagne since we opened and has gained many fans in that time. Part of the Bollinger stable, Ayala Brut Majeur is elegant, energetic, and dry, without being arid. Champagne is very food-friendly (if you’ve never tried with fish and chips, it’s a must!) and has the ability to enhance even the most subtle flavours beautifully. A world-class Champagne. At an altitude of 365 metres, Monthelie overlooks the Auxey-Duresses and Meursault valleys. The Changarnier family has lived in this village for several centuries, founding the domaine in 1720. Now, Claude and Antoine Changarnier continue this wine-growing tradition. Their professional careers carried them far from the wine world, but their Burgundy roots remain anchored in this terroir.

This sparkling wine has an expressive and very well-developed body with considerable finesse. Its fine fruit and its tangy acidity contribute to an elegant and very harmonious wine. A sparkling wine for every occasion.

Made from 100% Grand Cru & Premier Cru, Ayala Blanc de Blancs fully expresses the superb calibre of great Chardonnay from the best crus of the Côte des Blancs. It  is produced in small quantities, and only in exceptional years and benefits from 5 years ageing in the cellars which helps intergrate the remarkable minerality and complex flavours. Produced from the Grand Crus; Cramant, Chouilly and Le Mesnil-Sur-Oger, and also Premier Crus; Cuis and Vertus.

Tasting Note: Bright, pale yellow with white gold glints A delicate but expressive nose, showing wonderful aromatic freshness with notes of white fruits and lime. A striking voluptuous and vibrant silky texture on the palate. Passion fruits, citrus fruit, peaches and subtle notes of acacia honey. Voluminous, toasty, and extremely refined. 

Ayala's Rosé has an unusually high proportion of Chardonnay in the blend, this gives the wine tremendous elegance and poise. The nose and palate are full of gentle red fruit character with hints of strawberries, raspberries and even blackcurrants.
