Caiaffa works to the principle of synergistic agriculture. They believe that nature is man's greatest collaborator and that it is nature which maintains balance. Certified organic, they do not use insecticides or pesticides in order to encourage a balanced ecosystem and work at one with nature.
A must maceration for 36 hours helps extract the layered features of this grape. Fermentation occurs spontaneously in the presence of native yeasts, resulting in a floral and highly aromatic wine, reminiscent of lillies, pear juice and sherbet. A long, steely backbone brings balance and structure. A wonderful white for all year round.
