What the critics say...
“Thierry Pillot is one of the best young white winemakers in Burgundy right now… Buy these wines before Monsieur Pillot becomes the next Burgundian superstar.” Tim Atkin MW
“Domaine Paul Pillot is one of those producers making whites with a real gleam, a luminous clarity. I taste hundreds of wines in Burgundy week, and have to scramble through my notes to check in with my views on many of them, but with Domaine Pillot I remember where the table was in the room, and where I was standing as the wine hit my tastebuds.” Victoria Moore, The Telegraph
What we say...
Outstanding; delivers way above it 'Bourgogne' label. A fresh and distinctly cool nose features notes of apple, pear and a whiff of citrus. There is excellent mid-palate density to the round, succulent and delicious flavors that terminate in an agreeably dry and crisp finish where a hint of bitter lemon arises.
The young Thierry Pillot is turning this domaine into one of the greats of Chassagne. His skill and enthusiasm coupled with truly fabulous vineyard holdings (which include Caillerets, La Romanee and Grande Ruchottes) make a formidable combination. Thierry favours wines of tension and transparency; he achieves this through not picking too late and reducing the influence of oak in the ageing process. The wines are rarely matured in more than 20% new oak and he uses a mixture of barrique and larger demi-muis barrels.

Ripe and intense plum fruit with subtle cinnamon spice lift defines the nose. The concentration of the primary fruit aromatics builds with airing, giving further dimension. Licorice and lavender florals elegantly unfold into a gentle gamey bouquet. Generous and succulent with a silky and supple tannin texture, and juicy acidity giving impressive length and persistence. Brightness and approachability are the driving force of this wine, however a hint of complexity we have come to expect from this vineyard adds a layer of real and intriguing character to the fruit depth.

A tight, minerally wine with classic Hamilton Russell Vineyards length and complexity. Unusually prominent pear and lime fruit aromas and flavours are brought beautifully into focus by a tight line of bright natural acid and a long, dry minerality. An elegant, yet textured and intense wine with a strong personality of both place and vintage.

On low-vigour, stony, clay-rich soil, in a cool maritime mesoclimate, naturally tiny yields of well under 35 hl/ha give rise to a certain tightness, tannin line and elevated length to balance the richness and generosity of this Pinot Noir. The wine is not overtly fruity but it is soft and generous and shows hints of alluring savoury “primal” character along with a dark, spicy, complex primary fruit perfume. Classy and classic.

The 2005 Viña Tondonia Reserva is immediately appealing, exhibiting aromas of baked plums and cherries, Asian spice and tea leaves. Silky tannins are woven across the generous palate, revealing great depth of flavour from a core of muddled forest fruit to a layer of sweet spice, which is complemented by an underlying meatiness. Lovely richness and texture across the palate which is seamlessly balanced by the notable acidity, a trademark of all great Riojas, and finishes with a long, spicy finish. Archetypal traditional Rioja which is open and enjoyable now yet has the spark which will allow it to unravel further complexities over the coming decade and beyond. May be worth picking up a case or two to enjoy this at any point between now 2027.
